Green Monster Pasta
Ingredients:
- 1 package pad Thai rice noodles ( I like the moringa lotus food brand )
- 1 c. chopped broccoli
- 1 cucumber, quartered and sliced thin.
- 1 c. shredded cabbage
- 1/2 c. chopped cilantro
- 2 limes, cut into wedges.
- 1 cup veggie stock
- 2 heaping spoonfuls peanut butter
- 2 T coconut aminos or Tamari
- 4 cloves garlic, minced (1 tsp dried)
- 1/2 inch knob ginger minced or 1/2 tsp dried.
Directions:
- Bring a large pot of water to boil. Once it’s boiling add the broccoli. Cook for 2 minutes then add in pasta. Cook another 5. Then drain and rinse
- In the meantime sauté the garlic and ginger using some of the veggie stock to keep it from sticking. Sauté 3 minutes until it’s no longer raw.
- Add in remaining veggie stock, peanut butter, and coconut aminos. Turn heat to low. stir until it all comes together then take off the heat.
- Once pasta is ready put in a bowl and top with sauce. Add cucumbers, cabbage, and cilantro. Stir and serve with lime wedges to squeeze over the top.
