Instant Healthy(er) Noodles (gluten free)

This is a game changer. Ramen-esqu instant noodles without all the junk. 

1 packet brown rice noodles
1 spoonful better than bullion vegetable base
water to cover
1 tsp turmeric
1 bag frozen vegetables 

Place everything but frozen veggies in a pot and bring to a simmer. Follow cooking directions on pack of noodles. We use Annie Chun's Vegan Rice Noodles. Add frozen veggies the last two minutes of cooking time then serve.

  • Repurposing leftovers
  • Avocado, Cilantro, and Lime Juice
  • Carrots, Peas, Broccoli, and Parsley 
There is also the option of adding fresh vegetables. Just chop them and cook them in the water, bullion, and spices for 5 minutes before adding noodles.
